Honey Cole Slaw Dressing

Listen up fellow cooks – you do not – I repeat do not need to buy one of those ridiculously overpriced Cole slaw “kits” to make Cole slaw for a crowd – or even for a couple of people. This is a recipe for just about the best Cole slaw dressing that you’ve ever tasted.

Here’s the scoop, if you put all the ingredients in one of those handy little ball jars you don’t even have to measure – it’s on the side of the jar. There are 5 ingredients not counting salt and pepper and I bet you have all of them in your fridge and cabinets. You may be thinking that Cole slaw is not a big deal, but it is at our house – especially if grilling hot dogs or hamburgers is part of the plan as it should be now that summer is finally here.

This recipe is perfect for Memorial Day next weekend whether you grill burgers, hot dogs, chicken, or ribs (and you have to grill out on Memorial Day) Cole slaw is the side dish you are looking for – particularly when it’s this good and this easy. The thing that makes this recipe special is that I replace a couple of tablespoons of sugar with honey. Honey is just better and the taste is that little twangy something that sends people back for one more serving. The dressing starts with mayonnaise. It should be good mayonnaise – I’m a Hellmann’s fan but I know there are some Duke’s lovers out there.

Put just a little under a cup in your bell jar. Add 2 tablespoons each of apple cider vinegar and honey, a teaspoon of Dijon mustard, about a teaspoon of celery seeds, and a pinch of salt and pepper. Next get your workout by shaking it with vigor until all ingredients are well combined. I will admit to making the rest of the recipe easy by buying bags of cut up cabbage and carrots. I think it’s cheaper than buying a whole cabbage and a bunch of carrots and certainly saves some time. You can make the dressing a couple of days ahead, get your cabbage mix and be ready for a 30 second assembly. The only extras I ever add are chopped tomatoes for decoration if the mood strikes me. Forget about the dried fruit and weird nuts and seeds that come in the “kit”. You’ve got this one down. Make this recipe soon – you know it will be a new favorite. Enjoy!

Ingredients:

¾ cups mayonnaise
2 Tbsp honey
2 Tbsp apple cider vinegar
1 tsp Dijon mustard
1 tsp celery seeds
Pinch of salt and pepper

Directions:

Put all ingredients in a jar (can use a bell jar with measures on the side.)

Shake to combine.

Toss with about 8-10 cups chopped cabbage or packaged cabbage slaw.
