Desperation Dinner Sandwich
It’s that time of year when the garden needs all your time and so do many other things. Spring is busy and for a few weeks it seems like everything is in high gear. Somehow grocery shopping gets ignored but dinner time still comes. Wouldn’t it be easier to do a last-minute dive in the fridge and toss caution and calories aside?
The answer is yes. This particular menu was so weird but so good, it must be mentioned. Let’s start with a basic peanut butter sandwich but first toast the bread. A nice thick spread of peanut butter on toast is a great start, but what about jelly? I’m always going to vote for raspberry, but if you happen to have it, hot pepper raspberry jelly is a little treat – either is great.
Now about that crunch and salt (isn’t sweet and salty the best?) and what takes this over the top – do not cringe, but a crispy strip of bacon makes this a beautiful open face sandwich. There is disagreement in our house but if you have the energy, fried garlic chips are the perfect garnish. If you think this may be the strangest thing I’ve ever blogged you may be right, but some night when you are hungry and tired and need a lift give this a shot.
I do not think you will be sad about it. We call it Desperation Dinner, but we also call it delicious. Enjoy!
Ingredients for 2
2 pieces of bread (your choice but 7 grain is yummy) toasted
2-3 Tbsp peanut butter
3 strips crispy bacon
2 Tbsp favorite jam or jelly (raspberry!)
Optional: 2 garlic cloves thinly sliced fried in a little olive oil until crisp – not brown
Directions:
You already know! Spread peanut butter on toast – top with jelly, bacon and garlic if using. Eat this and you will probably want one more!
