Mini Cinnamon Rolls

Don’t you just love the smell of cinnamon rolls baking in your house (or anywhere for that matter)? I am not referring to the ones that are unrolled from a can, baked and then squirted with white stuff from a pouch.  Those aren’t really good.  It’s a desperation move and we’ve all been there.

But here is a solution that is almost as simple and tastes divine. You need five things, five minutes, and one pan to make the best mini cinnamon rolls anyone has ever tasted. Doesn’t that sound worth it?

Yesterday when the Titans were having an epic first half loss my guys just looked just so sad. A treat might soften the blow and cinnamon rolls are always a favorite so I took a roll of puff pastry out of the freezer. It was defrosted by halftime. The first step was simply to unroll the dough and sprinkle it with brown sugar, cinnamon, pecans, and Craisins (red for Christmas).

Next roll it back up, cut in twelve circles and put each one in a mini muffin cup that is well sprayed with cooking spray.  They baked for 25 minutes and just when the Titans were looking a little better, we had hot cinnamon rolls to add a little festive cheer. It’s hard to be sad when you are eating warm cinnamon rolls. And don’t let yourself be limited by ingredients. A few mini chocolate chips could be scrumptious. I’ve never tried but next time I just might go for those little Heath Bar chips. Raisins are fine, nuts are optional and a losing football team is not required. In this house the request has already been made to have mini cinnamon rolls on Christmas morning with a steaming mug of hot chocolate. That will not only be a breeze but a pleasure – I’m already looking forward it. You can be too! Enjoy!

Mini Cinnamon Rolls

(FYI – these make a great gift!)

Ingredients

1 roll of puff pastry, thawed (I like Trader Joe’s but Pepperidge Farm is good too)

¼ cup brown sugar

2 tsp cinnamon

3 Tbsp raisins or Craisins (more if you like)

3 Tbsp chopped pecans (or walnuts) optional if nuts are not your thing

Directions

Preheat oven to 350 degrees.

Spray a 12-cup mini muffin tin with cooking spray.

Unroll pastry on a wax paper covered surface for easy clean-up.

Sprinkle pastry evenly with brown sugar, cinnamon, raisins, and nuts.

Roll up and cut into 12 pieces.

Place each roll in a sprayed muffin tin and bake 25 minutes.

Remove from tins while still warm for maximum eating pleasure!
