Potatoes au Gratin with Boursin Cheese

If you are looking for a quick and easy side dish to serve or take to Thanksgiving or Christmas or even to make a weeknight special – I have just the thing. This recipe for very delicious Potatoes au Gratin with Boursin Cheese will make your day. With three ingredients and almost no mess it wins hands down in my book. This is the perfect side dish to steak, pork, chicken, honestly just about anything. The recipe serves four generously, but you can do the math and make it for a larger crowd. It’s so easy. Start by spraying and 8”x 8” casserole dish with cooking spray and preheat your oven to 400 degrees.

Slice a pound of potatoes – I like the little red ones – I never peel them. Melt together a cup of cream and 2 ½ ounces (half a package) of Boursin cheese. Put half of the potatoes in the casserole and add salt and pepper. Pour half of the melted cheese and cream over the potatoes and repeat a second layer. Pop it in oven for 50 minutes to an hour. You won’t believe the results – crispy brown topping and the potatoes just seem to have melted into the cream. This is truly a crowd pleaser. You will want to try this very soon. Enjoy!
