Lemonade Pie and a January Sky

Why at the end of January on a chilly cloudy day would someone make a frozen lemonade pie? The answer is because it’s the end of January on a chilly cloudy day and that pie will absolutely bring a little brightness into the room. If you haven’t tried this before then you just must make one. It will make you feel light and happy. The zing of lemon and a touch of zest combined with the cool ice cream is just the most perfect dessert in the world. Add the crunchy graham cracker crust and its heaven on a plate. Also, it’s worth mentioning that this pie takes minutes to make with only four ingredients on hand. It can be jazzed up with a lemon twist and a little fruit or served as is right from the freezer.  This recipe actually makes two pies, one for you to enjoy and an extra for the freezer or as a happy surprise for a deserving friend. You can even get very clever and make small individual pies if you are entertaining and want to be extra fancy. Recently I observed these little pies being served to a group of women who usually shun dessert, resulting in almost every one of them joining the clean plate club for the day. It’s just that refreshing and tempting – one bite would never suffice.

Remember the song lyrics, “I’ve got sunshine on a cloudy day. When it’s cold outside, I got the month of May?” That’s how this pie will make you feel! Enjoy.

Lemonade Pie

Ingredients

½ gallon vanilla ice cream, softened

6 oz container of frozen lemonade, thawed (I couldn’t find this size and used ½ of a 12 oz and then made the rest into lemonade!)

Zest of 2 lemons

2 graham cracker crusts – bought or homemade

Directions

Soften ice cream in a large mixing bowl.

When it is soft enough to stir mix in lemonade and lemon zest.

Pour mixture into two prepared graham cracker crusts. (Or make individual pies)

Freeze until solid – 3 to 4 hours.

Remove from the freezer a few minutes before serving.

May garnish with fruit.
