Annette’s Homemade Ice Cream

This is the promised ice cream recipe from Annette in Seaside and it’s a doozy. I had to read it two times to really believe you don’t have to cook anything! What a perfect way to make ice cream in the middle of a hot summer – mix stuff up – get it cold – and freeze away! Here’s another great piece of this recipe – you can pick your favorite fruit, or you can embrace your own indecisiveness and end up with two fruits like we did – nothing wrong with that!

Annette owns the adorable gallery Newbill’s Collection in Seaside, Florida, where ice cream is a must all year long. My friend Beth invited me down to the Gulf for a quick trip and we made a stop at Newbill’s Collectionfor a book signing at the gallery – a Nashville favorite. Annette, the gallery owner, has also spent some time cooking on her local tv station and we immediately connected with ideas for those easy to make in minutes recipes. She loves this no eggs, no cooking ice cream and shared the recipe with the promise I could pass it along.

Due to crazy schedules we are celebrating Father’s Day a little early and as always, my son loves to prepare a dinner – usually steak or burgers and my job is dessert.  This proved to be the perfect opportunity to give Annette’s recipe, and a try, and so, I did. First, mix milk, cream, evaporated milk, condensed milk, and sugar in a big bowl, then put it in the fridge. That’s it. We left it to get cold overnight.

Cut up the fruit you want to use – in this case peaches and strawberries, about a cup of each. Mix the fruit with a little lemon juice and a little more sugar if you like (this fruit was sweet enough and sugar was not necessary). Let your ice cream freezer do the work then mix the fruit into the almost frozen ice cream. I found that this recipe makes enough for two batches of ice cream in our little bitty ice cream freezer. Rather than waste half a can of condensed and evaporated milk, I mixed up the full amount of ice cream base and put half of it back in the fridge to make in a few days – maybe raspberry banana flavored or blueberries? The big Father’s Day dinner hasn’t yet happened but I finished the ice cream this morning and dare I say – it made a perfect breakfast (dairy – fruit – that’s good for you – right?). ANNETTE’S HOMEMADE ICE CREAM

1 qt. milk plus 1 cup (or more depending on amount of fruit to be used

1 can sweetened condensed milk

1 small (5 oz) can evaporated milk

1 pt. whipping cream

1 cup sugar

1 tablespoon vanilla extract

3 cups (or less) mashed peaches(fresh) or strawberries mixed with 3/4 cup sugar and juice of 1 lemon or 6 well ripened bananas, mashed.

Combine first 6 ingredients and chill.  Freeze to a mush in an ice cream maker according to manufacturer’s directions or in an electric or hand turned freezer.  Add fruit mixture and freeze hard.  Makes 1 gallon.
