Arugula, Tomato, and Burrata Cheese Salad

Finally, I’m back to my new blog and I’m also a new Grandmom making me the happiest person alive! But that has meant, over the last few weeks, most dinners have been more on the run and less ready for that “glamour shot”. We did sit down to a delicious meal last night and I made our favorite salad which only happens when our farmers’ market has put out the Amish Tomato sign.

This salad is so easy and so fresh. It’s even better because I sprinkled a few arugula seeds in my garden about a month ago and now I can pick alI the arugula I want. I find that thrilling although it was really no trouble – not a superpower or anything. It’s just fun to watch things grow.

The basic ingredients are really fabulous tomatoes, arugula, (Basil would be nice if arugula isn’t available.) a simple dressing of your best balsamic vinegar and best olive oil, and finally yet another star in this lineup – a nice ball of burrata cheese. That cheese is heavenly – salty and runny in the middle – perfect to take this salad from yummy to way over the top. Add in what you like, capers and a few small slices of Vidalia onion are nice. The arugula has such a snappy taste – you may not want to play with any other herbs. You will want to sprinkle the tomatoes with a little flaky salt – what a treat. Enjoy this salad with grilled fish or steak or on its own and it’s really a gourmet meal made easy.  It’s nice to be back to my blog. Make this recipe soon for one or many.  Enjoy!

Arugula, Tomato, and Burrata Cheese Salad

Ingredients: (for 2)

2 cups arugula

2 tomatoes (for your farmers’ market or backyard)

2 Tbsp olive oil (best you have)

2 Tbsp Balsamic vinegar (best you have)

1 ball Burrata cheese cut into 4 pieces

Maldon or flaky salt

Optional – capers, onion, 

In a clean jar with a lid pour in olive oil and vinegar and give it a good shake.

Divide arugula between two plates. 

Directions:

Slice tomatoes into nice fat slices and halve the slices and top arugula.

Put half of the cheese on each plate adding optional ingredients if desired.

Pour dressing over and sprinkle with flaky salt.
