Cookies and Ice Cream!

What do you do on a Monday when the sun isn’t shining and there are a million tasks that you should be doing? You make cookies of course. Cookies are always a good idea. If you are like me, you have a ton of favorites. I’m partial to shortbread cookies, oatmeal cookies, chocolate chip cookies – actually all cookies. I like different spices too – sometimes a warm spice cookie is just the ticket.

I have a recipe for a lemon and cardamom cookie that is so marvelous and the perfect thing for Monday blahs. It also has molasses as an ingredient – a favorite around here. This recipe will take you maybe five minutes to mix up. A brief rest in the fridge makes the final product a little tastier. And finally, a roll in sugar and it’s in the oven for 8-9 minutes. The smell is divine. As it happens after we devoured about half – I suddenly had a good idea.

I need a dessert for my son tonight and ice cream is in the freezer. Now you are thinking that’s fine – no one hates ice cream and cookies, but doesn’t everybody LOVE and ice cream sandwich.

These cookies are perfect for making ice cream sandwiches. They are nice and round Probably any flavor of ice cream would work but they are just absolutely lovely with strawberry. I may have sampled a few. You should make these cookies – they are just right on their own but if you happen to have ice cream…… Enjoy!

Ingredients

1 ½ sticks butter
½ cup sugar
½ cup brown sugar
1 egg
¼ cup molasses
1 Tbsp lemon juice
1 tsp vanilla
2 ¼ cups flour
3 tsp cardamom
1 ¼ tsp baking soda
¼ tsp salt
Optional: Sugar for rolling ( I like Turbinado)
Optional: Ice cream

Directions

Mix butter and sugar with an electric mixer until well combined.
Add egg, molasses, lemon juice, and vanilla.
Gradually add flour, cardamom, baking soda, and salt.
Let dough chill in the refrigerator for 30 minutes.
Preheat oven to 375 degrees.
Roll cookies into small balls and roll in sugar.
Place on parchment lined cookie sheets and bake 8 to 10 minutes.

Hint: I pressed down on cookies with the bottom of a water glass while still warm to make them more perfectly round.

Cool. Fill with ice cream and freeze or just enjoy straight from the oven!
