Coconut Pie
Cool as a…Coconut
In a hot, hot summer, a cool treat is just the thing. How about a coconut pie laced with a drop of rum that you make in the blender? I’m not kidding – eggs, butter, milk, baking mix, salt and rum – push the on button and let it blend. Pour the resulting batter in a pie pan – cover with coconut and bake away.
It’s hard to go wrong with this recipe – even coconut haters will lap this up. (And really – do we need to even acknowledge that a person can hate something as lovely as coconut?) An extra benefit is that this coconut pie is a great dessert to serve to company. Bake your pie in the morning and show off a perfect after dinner dessert in the evening. If I were you, I would make a coconut pie immediately. You probably have everything you need in to bake this ridiculously simple recipe. It will make you a rock star in the kitchen and just make you very happy when you have a bite – or 10. Enjoy!
Coconut Pie
Ingredients
4 eggs
2 cups milk
¾ cups sugar
4 Tbsp (1/2 stick) butter
½ cup Bisquick or similar baking mix
1 Tbsp rum
½ tsp salt
1 ½ cups sweetened flaked coconut
Directions
Preheat oven to 350 degrees.
Spray a pie pan with cooking spray.
Add all ingredients EXCEPT COCONUT to a blender and blend at medium speed for about 2 minutes.
Pour batter into prepared pan and sprinkle with 1 ½ cups coconut.
Bake 50 minutes or until set in the middle.
Cool and refrigerate before enjoying.
