Lemon Sorbet

I’ll keep you posted but, in the meantime, here is a special little treat I just made from some of our last lemons a Lemon Sorbet. With only 3 ingredients and no special equipment required, you can whip this delicious dessert up this very afternoon and serve it tonight. And, oh my, what a dessert it is. Crisp and lemony but creamy at the same time – this will satisfy everyone’s craving.
The recipe is too simple, there are only 3 ingredients: sugar, water, and lemons. I used 2 fairly large lemons and zested them. That produced about a cup of lemon juice. Next boil 1 and 1/2 cups water with 1 cup of sugar until the sugar dissolved and then mixed in the lemon juice and zest. Put that mixture in the freezer until almost entirely frozen and then slush it up in the blender for about a minute. Put the sorbet back in the freezer until ready to serve. It’s that easy. I tried it with my ice cream freezer as well and the results are about the same.
Mid-February may not seem like sorbet season but here is a little hint: whip this up for Valentine’s Day. It’s the perfect light refreshing dessert after any dinner whether with friends, a special someone, or for you, a special person! Add a cookie if you must. You’ll want to keep Lemon Sorbet in your freezer all year long. Enjoy!
Lemon Sorbet
Ingredients
1 cup lemon juice, plus the zest of one lemon (2-3 large lemons)
1 cup sugar
1 ½ cups water
Directions
Boil water and sugar until sugar dissolves.
Add lemon juice and zest and stir to combine.
Freezer lemon mixture until almost frozen.
Add frozen lemon mixture to the blender and blend for about 1 minute.
Pack into a freezer safe container and freeze until ready to serve.
Optional garnish: mint, berries and sometimes a cookie.
