Party Goldfish Snack Mix

Somewhere back in the sixties America was introduced to cheddar Goldfish and we thought they were a lot of fun. My mom used to make a delicious version of Cereal Mix with Goldfish crackers. I thought maybe the recipe came from a popular women’s magazine, but she said it was one of many on the back of boxes of cereal. One recipe might feature tiny pretzels, another left out the nuts, but it was the Goldfish crackers that pushed this particular recipe to make the final cut. That plus a lot of sweet and salty goodness! The cereal was Crispix, the rest of the salty mix were lots of mixed nuts and, of course, Goldfish crackers. The sweet part includes brown sugar and corn syrup…hard to go wrong. Best of all – it takes less than 20 minutes from start to end to create this yummy snack.

When someone asked me to bring snack mix to a party, I remembered what a hit this always was. And as luck would have it the Goldfish crackers now come in colors – specifically red and green! This may not qualify as an Italian Feast of Seven Fishes, but it sure as heck makes a cute Christmas themed snack. The party was pet themed, so snack mix with red and green goldfish in puppy dishes was clearly meant to be. It was a huge hit. Everyone wanted a puppy dish refill. That was a first!

I called my mom this morning to ask if I could write about Goldfish Cereal Mix and she was thrilled, but even more thrilled to learn about the red and green goldfish. I’m willing to bet she decides to make a batch soon for one her weekly get togethers. You might want to do that too. In the right container with a snappy bow this would be a perfect little holiday happy gift. Enjoy!

Party Goldfish Snack Mix

Ingredients

1 large box Crispix cereal

4 cups Goldfish crackers (Colors mix)

1 lb mixed nuts

1 cup (2 sticks) butter

2 cups brown sugar

½ cup light corn syrup

Directions

Preheat oven to 350 degrees.

Line a large rimmed baking sheet with foil and spray with cooking spray.

Add cereal, crackers and nuts to baking sheet and mix to combine.

In a small sauce pan over medium heat bring butter, sugar, and corn syrup to a boil.

Boil for one and a half minutes.

Pour over cereal mix and stir.

Bake for 15 minutes, stirring once.

Cool completely and store in an airtight container.
