Peach and Amaretto Ice Cream

Well, hi there! I’ve been gone a few weeks working on getting my new blog site up and running. Since it was first published in 2012 it seems like it’s time for a re-set and that’s what you’re going to get…but not yet. I’m still cooking and eating, and I bet you are too, so I thought I’d share a fun sweet treat while we wait for new blog magic.

We are headed into September but in the south that rarely means a big cool down – and ice cream is always good even in the middle of January so I’m sharing our family favorite – Peach and Amaretto. It is so creamy and delicious and so worth the few minutes it takes to stir up an easy custard and peel a few peaches.

This is marvelous with the lovely peaches we’ve been getting at the farmer’s markets, but a grocery store peach is still worth the effort. In truth I almost have to keep this ice cream in the freezer year-round. It’s crave worthy.

The trick is to stir milk and eggs together over low heat for a few minutes until it’s thick enough to coat the back of the spoon. One test is just to run your finger down the spoon and see if it leaves a line. Next add the rest of the milk, condensed sweetened milk for that rich sugary taste, and finally those delicious peaches. Let that all cool in the fridge until pretty chilly – at least an hour. My ice cream machine is older than this blog. It is an original Cuisinart that we took to my parents’ time share condo in Florida when my son was little. Ice cream was and is a favorite beach treat and of course a favorite summer treat. That ice cream maker was a big deal back then but now – if you don’t have one – they are in stores everywhere and online. It’s easy to use and I think we know there is nothing quite as wonderful as homemade ice cream.

Back to the recipe, now it’s time to pour the peach mixture in the ice cream freezer and let it do the work. When everything is almost frozen add a dash of Amaretto and let it blend in before putting the finished product in the freezer. Talk about your do ahead dessert. This needs no embellishments. A dish, a spoon and it doesn’t get any better. I can’t wait for you to see my new blog site but in the meantime please give this a try and as always – Enjoy!

Peach and Amaretto Ice Cream

Ingredients

3 cups whole milk

2 egg yolks

1 can (14 oz) sweetened condensed milk

¼ tsp salt

1 Tbsp lemon juice

¼ tsp ground ginger

1 tsp vanilla extract

2 ½ cups peaches (about 5) peeled and diced

2 Tbsp Amaretto (If you don’t want to use alcohol add an extra tsp of vanilla extract instead)

Directions

Combine 1 ½ cups milk with egg yolks in a saucepan over medium heat.

Stir with a whisk until mixture is thick enough to coat the back of a spoon – about 7-8 minutes.

Remove from heat and stir in remaining 1 ½ cups milk, condensed milk, salt, lemon juice, ginger, vanilla, and peaches.

Stir well, cover, and chill until cold.

Follow ice freezer directions and when the ice cream is almost ready add the Amaretto and let it churn a minute or two more.

Put in a freezer safe container (I use Tupperware) and put in the freezer until ready to eat.

Remember – don’t lick the bowl – it’s frozen and your tongue will stick!
