Peach and Watermelon Salad with Tequila Dressing
Three words: BEST SALAD EVER – that was our dinner last night.
This recipe is kind of weird but so worth it. It is a recipe for a watermelon and peach salad with our favorite burrata cheese in the middle – beautifully dressed with mint, flaky salt and a tequila dressing. Yes – you read that right. The dressing is a cup of tequila combined with a cup of sugar boiled down to a lovely syrup and cooled with a sprig of mint. I was so irritated when a search of our bar revealed not one drop of tequila. But I did not panic – it was too hot to venture out of our little valley and so I made an unusual phone call to my neighbor and dear friend. It went something like this, “Hi – I know this is weird, but could I please borrow a cup of tequila?” A short silence followed until I added “And can I borrow the bottle too – I want to take a picture?” My relieved friend said “Oh – it’s for a recipe!” Of course, she was happy to let me have her bottle of tequila. That’s what a real friend does. The rest is easy.
Peel 2 or 3 peaches (remember the boiling water trick) and cut into bite size pieces. No one cares if they are perfect. Cube about 3 cups of watermelon and mix the fruit together. Boil 1 cup of tequila with one cup of sugar (you will have dressing left over) until it reduces to a thick syrup. That takes about 5 minutes.
Take it off the heat and add a sprig of mint. After it cools to room temp you can compose your beautiful salad. The flaky salt is a must and a little mint adds a fresh bite. You could serve this as a light main course with some nice toasted French bread or as a side salad with grilled chicken or fish. Now it prime time for both peaches and watermelon and this yummy dish is calling your name. Enjoy
Peach and Watermelon Salad with Tequila Dressing
Ingredients (for 2)
1 cup tequila
1 cup sugar
Small bunch of mint
2 peaches peeled and cut into cubes
3 cups cubed watermelon
1 ball Burrata cheese
Flakey salt – like Maldon
Directions
Boil tequila and sugar until thick and syrupy about 5 minutes.
Remove from heat, add a sprig of mint and allow to cool to room temperature.
Mix peaches and watermelon and divide between 2 bowls.
Place half of the cheese in the center of each bowl sprinkle with a little flakey salt and add sliced mint over the top.
Drizzle each salad with about 2 Tbsp of tequila dressing and serve.
