Pork Tenderloin Skewers

Ingredients

1 ½ to 2 lb pork tenderloin, trimmed of fat and cut in one inch cubes

½ cup brown sugar

½ cup rice vinegar

1/3 cup fish sauce *

2 Tbsp chili paste * (use less for less heat or more if you like a spicy kick)

2 cloves garlic, chopped

Optional: red onion slices and mini peppers to grill

Directions

Combine brown sugar, rice vinegar, fish sauce, chili paste, and garlic in a large bowl.

Add pork and marinate for at least 30 minutes or up to 6 hours.

Light a grill or preheat broiler.

Thread pork on skewers reserving the marinade.

Put marinade in a small saucepan and bring to a boil over high heat.

Boil 1 minute. Cool slightly.

Grill or broil pork skewers brushing with reserved marinade until desired degree of doneness.
