Raspberry Brûlée
Ingredients
6 oz box of fresh raspberries
4 oz raspberry liquor (Chambord is a popular brand, but there are lots of others)
1/2 cup sour cream
4 Tbsp brown sugar
* This is a guideline of amounts. Make it fit the dishes you use. Honestly, I never measure for this dessert, it’s a visual dish.
Directions
You have two options for browning the sugar on this dessert and both work just fine. The first is to put an oven rack as close to the broiler as possible and heat the broiler for 5 minutes. Put the dessert under the broiler, watching constantly, to lightly brown the top. The second is to use a propane kitchen torch if you have one, to brown the top. Both methods take 1 to 2 minutes, making this a breeze to serve, as it should be for your celebration dinner.
Put raspberries in a small ramekin dish and pour raspberry liquor over the top.
Ice the raspberries with sour cream. (At this point you can put this in the refrigerator until dessert time.)
When you are ready to serve dessert, sprinkle the sour cream topping with brown sugar and broil the top.
