Fast and Festive Shrimp Dinner


It’s almost Christmas and unfortunately (for me at least) that means eating things like ham rolls and Christmas cookies for dinner because they are left over from a party the day before when we also had ham rolls and cookies for dinner. Possibly the best gift we can give ourselves and our families is a healthy meal or two during the holiday rush, but who has time?

Here is a quick idea for a dinner that feels fancy, and can be whipped up with very little prep time. Last night before the storm and cold were due to arrive I grilled shrimp with a lemon and honey marinade- baked sweet potatoes and added a quick side of microwaved steamed broccoli. And I sat down to eat this like a normal person.  Even in the cold you can make this dinner with the help of your oven’s broiler. The marinade takes seconds with the quick trick of prechopped frozen garlic from the store. We don’t have an ocean, too bad, so the shrimp were purchased frozen but peeled and deveined to save time. We do have bees, so honey is a favorite and we have lemon trees with lemons. Even if you don’t have those things on hand, they are generally easy to acquire.

Start with a resealable plastic bag and add marinade ingredients, that should take about 30 seconds. Add the shrimp and put it all in the fridge for 30 minutes to an hour. Start your potatoes. When you are ready to grill (or broil) thread the shrimp on skewers. That takes about two minutes. I prefer metal, it heats from the inside to cook better. Grill or broil about two minutes per side. Now you have spent your five minutes of cooking time. Delight in this lovely and delicious dinner and then, of course, have a Christmas cookie for dessert! Enjoy!

Honey and Lemon Shrimp

Ingredients
1 lb shrimp peeled and deveined (20-25 per lb)
¼ cup honey
2 Tbsp soy sauce
Juice of ½ lemon
2 Tbsp bourbon
1 Tbsp olive oil
1 cube frozen garlic or one clove smashed

Directions

Add all ingredients to a plastic sealable bag or a bowl and refrigerate for 30 minutes to an hour.
Preheat grill or broiler and thread shrimp on skewers.
Grill for about two minutes per side.
