Cream Biscuits

Last weekend we celebrated a birthday for my son’s fiancée, Lauren. She appreciates good food and I think I know lots of her favorites. She’s not a cake person, but loves a good flan. Seafood will usually win out and a really good salad is almost always a request. But I forgot how much she loves biscuits.

That was a discovery made when we had biscuits instead of rolls for Thanksgiving and they were such a hit. Biscuits had to be on the birthday menu. Because shopping isn’t practically a daily event like it was pre-pandemic there were several key biscuit ingredients just not in stock here. Yes, buttermilk and self-rising flour can be “created” from other ingredients, but sometimes it fun to try something off the beaten path. Plus – well – time was of the essence since this was a last-minute addition. I went with an old long forgotten recipe for cream biscuits just remembering that they were so easy to make. Basically, the ingredients are flour, baking powder, salt, and cream plus a southern twist of just a pinch of sugar. Mix it up, pat it out (don’t even mess with a rolling pin) and cut biscuits. I spent more time deciding which biscuit cutter to use than I did mixing the dough. Truthfully you could just cut squares, but what’s the fun of that? Here’s the thing – these biscuits are so light and so flaky you won’t believe it. They practically float out of the pan. Dense biscuits make people sad. It means the dough is over processed and they aren’t properly baked. There is nothing sad here. These are happy biscuits for celebrating happy times which we all need more of. They are a cinch to make and then they do a disappearing act like the circus has come to town. Bake Cream Biscuits soon and make someone’s day. Enjoy!

Cream Biscuits

Ingredients

2 cups flour

1 ½ Tbsp baking powder

1 tsp salt

2 tsp sugar

1 ½ cups cream

Directions

Preheat oven to 400 degrees.

Combine dry ingredients in a large mixing bowl and then stir in the cream to just make a dough come together.

Pat out dough on a lightly floured surface and cut biscuits.

Bake for 12 to 15 minutes until lightly browned.
