Seafood boil
When we were at the beach two weeks ago, I let the Harris Teeter be my inspiration for dinner. Don’t we all miss Harris Teeter? Just a stroll through the seafood department could make you swoon.
It seemed like a good way to start was the fresh local shrimp. I threw some snow crab in the basket and Old Bay Seasoning. That seemed like a dinner plan. The weekly farmers market yielded good corn and new potatoes – perfect. We had stocked lemons, butter, and beer in the fridge already. Dinner was not only going to be delicious, but it was going to be a snap to put together. I know in the Carolinas this dish would be Frogmore Stew and in Georgia a Low Country Boil, but we were at Amelia Island, so I got to make up my own name. Actually, this is a pretty economical way to serve seafood to a crowd and equally easy to make it for one person. I am estimating this based on 6-8 large shrimp and one crab claw cluster for each person. Along with some spicy sausage, yummy potatoes and corn it is pretty filling. It smells great while its cooking and requires so little effort that with 5 minutes of prep you can have dinner for one or ten on the table in 30 minutes. Here’s what to do for two — do your own math for more. Pour 2 beers in a large pot. I am not a beer drinker and I promise this doesn’t really taste like beer when it cooks. If you really hate beer, use chicken broth. Add 3 Tbsp Old Bay seasoning, a garlic clove cut in half and a bay leaf if you have it. Depending on size of potatoes cut in half or quarter. Cut corn into 3 pieces. Peel and devein shrimp. Cut a lemon in half. Add potatoes to the pot and boil until almost tender, about ten minutes, throw in the corn for a couple of minutes add the crab and shrimp 3-5 minutes and dinner is severed – with a lot of hot melted butter. You only clean one pot and really somebody else should do that. Enjoy!
Seafood Boil
Ingredients (for 2 – use those math skills for more)
2 beers (if make for more people you just need enough to cover ingredients – not a beer per person situation)
3 Tbsp Old Bay Seasoning
1 bay leaf (optional)
1-2 cloves garlic cut in half
1 lemon cut in half
6 new potatoes
1 link of smoked sausage – I used turkey
2 ears of corn
12 large shrimp
2 snow crab legs clusters
Directions
Pour beers in a large pot and bring to a boil.
Add Old Bay, bay leaf, garlic and lemon.
Add sausage and potatoes and boil until potatoes are almost done – about 10 minutes.
Add corn for another 2 minutes.
Add crab and shrimp and cook another 3 to 5 minutes making sure shrimp is cooked.
Serve with melted butter and more hot sauce if desired.
