Frozen Peach Pie with Pretzel Crust

You’ve probably tasted and enjoyed a lot of frozen pies – especially here in the South. If the humidity today is any hint, the heat level is going to make you crave this cool tasty treat that is a breeze (that sounds good) to whip up. AND the fun part is: a Frozen Peach Pie with a Pretzel Crust. I’ve really switched up this recipe to make something special and delightfully different It’s the best of everything – salty crust – cool sweet peaches, and just a hint of Amaretto for that taste that makes you say wonder what’s so delicious. Best of all, you only bake the crust for about 8 minutes so no big heat moment in the kitchen. The filling is a mixing bowl wonder and the freezer does the rest. This recipe started as a strawberry pie that my family has loved for years, but a quick visit to a tiny pop-up farmers market made me change my tune.

What could possibly be wrong with subbing peaches for strawberries and adding that little smidge of Amaretto? Well now I know the answer – absolutely nothing. This dessert won the top rating at my house which means it was gone in a flash and the request for more has already come in. Here’s the easy part, it’s just mixing up a bunch of ingredients for the filling. It’s an interesting line-up because the recipe contains jello and you will probably think I’m crazy to encourage real whipped cream when a tub of that stuff known as Cool Whip seems appropriate – but there you are. The whipped cream is better but heck, do what you must to make this pie.

Frozen Peach Pie with Pretzel Crust

Ingredients
Crust
1 ½ cups crushed pretzels
¼ cup brown sugar
½ cup melted butter
Filling
2 cups peaches, finely chopped
4 oz cream cheese
3 oz package of peach jello
12 oz can sweetened condensed milk
1-2 Tbsp Amaretto (optional)
1 cup whipped cream (real is best – Cool Whip is okay)
Directions
Preheat oven to 350 degrees.
Mix ingredients for the crust, press into pan and bake for 8 minutes.

Cool crust while preparing the filling.
Mix all ingredients for filling except whipped cream to thoroughly combine.

Fold in whipped cream.
Place combined ingredients in the crust.
Freeze for 4 hours before serving.
Hint: Easier to cut if you remove pie from freezer 15 minutes before serving.
Top with more whipped cream!
