The Perfect Egg
Recently I came across a story about the perfect egg. It sounded pretty delicious but with way too much work involved. Breakfast should be yummy yet a peaceful start to the day. This is a recipe that guarantees both worlds. It is a perfect start to a nice weekend or maybe a Father’s Day treat to celebrate a great dad. Basically, we are talking about scrambled eggs slightly elevated with minced herbs and a touch of cheese. A slice of toast makes it all perfect and even more better – this meal takes five minutes to prepare.

I start with three of my favorite herbs, tarragon, dill, and parsley, but you can pick.

Basil is lovely and thyme is a good choice too. My lazy way to chop is with kitchen scissors and I never measure but for four eggs to serve two people about 1-2 tablespoons of herbs once minced. The only other ingredient is 2 tablespoons of grated cheese.
My pick is always gruyere but make it your own. Here is the plan- pop two pieces of bread in the toaster and melt a teaspoon or so of butter in a skillet over low heat. Beat the eggs – not to death, but to combine yolks and whites. Add a little salt and pepper.
Pour the eggs in the skillet and stir gently adding herbs and cheese and cook until slightly moist. Butter the toast and plate the eggs. There you go. Breakfast is served. A good cup of coffee is a nice addition. Enjoy.
Ingredients
4 eggs

1 tsp butter

1-2 teaspoons minced herbs (I like tarragon, dill, and parsley)
2 tsp grated cheese (I like gruyere)
Salt and pepper
Optional: toast with favorite jam

Directions

Melt butter over low heat,
Beat eggs just to combine.
Pour in the skillet with melted butter and slowly stir.
Add herbs and cheese and cook until slightly moist.
Serve with toast.
